USB-VGA at your link costs $30. Add a bit more and buy x86 with two onboard video outputs. Onboard video at x86 will be many times faster than USB video at raspberry.

VMware workstation can allow VNC connection. WTware can connect to VNC. But... hmm.. only connect. To administrate it, or some other short tasks. VNC is not for everyday longterm work.

Please, give me full logs. From boot to error, as short as possible.
And remove all redundant lines from config.. Put only lines you are sure that are absolutely necessary.

And show me a log. Log will be veery large, so please don't do unnecessary things. Boot, get error, save.

I do not think automatic wtware update on local disks is a good idea.

If you like to test new versions, use network boot. With network boot, you can easily change version and easily return it back if something goes wrong.
